Two-step Cupcakes

These cupcakes get made for every one of our parties. So much healthier than having someone blow candles out on a single large cake! And any kids that want, can have their own candle too. Make sure you have one for each guest and a few spare, and if possible you can use them to form a line into the person’s age.

They keep well in the freezer so they’re handy for snacks, too.

1¼ cups self raising flour

½ cup sugar

60g melted butter

2½ tablespoons milk

2 eggs, lightly beaten

1 teaspoon vanilla essence

Preheat oven to 180°C / 350°F.

Prepare patty-pans in a 12-hole tray.

Step 1.

Place all ingredients in a bowl.

Beat until smooth.

Step 2.

Spoon mixture evenly into patty pans.

Place in oven and bake for 15-20 minutes.

When lightly brown, remove from oven and set aside to cool.

Ice as desired. You can add sprinkles, 100s and 1000s, a small lolly, a chocolate chip…
