This cake is so quick to make, and the ingredients are often already in your kitchen.
For when you need a cake in a hurry.
This one really needs a ring-pan (it looks like a donut.) It can be easily made into cupcakes by halving the cooking time.
200 ml vanilla yoghurt
½ cup sugar
½ cup oil
2 eggs, lightly beaten
1 teaspoon vanilla essence
1 2/3 cup self-raising flour
Set the oven to 180°C / 350°F.
Grease and flour a ring pan.
Place sugar, oil and yoghurt in a bowl and mix. Add eggs and vanilla essence. Beat well.
Add flour. Gently fold it into mix, taking care not to beat or mix it.
Pour mixture into prepared cake tin. Place in oven and bake for 30 minutes until golden on top.
Leave in the pan to cool for 5 minutes.
Sift icing sugar over cake before serving, for a snowy effect.
