This is a lovely loaf that feels like a treat but is actually pretty hearty. It contains a small amount of sugar and no icing.
Good for those in between times when you need a snack but don’t want sweet or savoury.
1 tea bag
250ml boiled water
120g pitted dates
1/3 cup sugar
60g butter
180g plain flour
1 ½ teaspoons cinnamon
1 teaspoon baking powder
½ teaspoon bicarb soda
Pinch of salt
Put the boiling water and tea bag into a saucepan. Chop the dates into smallish pieces and add to saucepan. Add sugar and butter.
Remove tea bag.
Warm on stove over medium heat until boiling. Reduce heat and simmer for one minute. Set aside.
Preheat oven to 170°C / 340°F.
Grease a loaf tin or line with baking paper.
Mix flour, cinnamon, baking powder, bicarb and salt in a bowl. Pour in contents of saucepan and mix gently with a wooden spoon.
Pour mixture into prepared tin and smooth the top. Place in oven and bake for 30-35 minutes.
Set aside to cool for 5 minutes. Slice to serve. Can be enjoyed plain or spread with butter.
