This recipe goes back so long I don’t even know where I originally got it from. It’s been a traditional favourite to feed vegetarian guests, and is a welcome and filling reprieve from meat for my family. Over the years it’s taken some adjustments. You can add more or less to it, and try other veggies, depending on your taste.
1 medium onion
1 large potato
1 large carrot
½ cup cheese
½ cup plain flour
1 egg, lightly beaten
Extra ¼ cup plain flour for coating
Oil for frying
Grate onion and potato. Squeeze out most of the liquid (don’t worry too much). Place in a large bowl.
Grate carrot and cheese. Place in the bowl and mix through.
Beat egg a little. Pour on top of gratings and mix through. Add flour and stir through. Add a little extra flour if the mix isn’t holding together.
Squeeze balls of the mix into balls, then flatten into patties. Roll in extra flour and place on a plate.
Place oil in pan on medium heat and fry patties until golden brown on both sides. Add extra oil as the burgers will suck it up a bit.
Once cooked, drain on paper towel.
Serve with 999 island dressing (see last week’s recipe).
