This is the start of my recipe blog, hooray!
Once a week I’ll post one of the recipes from my upcoming cookbook, which is due for release later this year.
All of my recipes are pretty simple. I don’t like to spend much time in the kitchen after a long day, trying to come up with something the whole family can eat, which normally means extra bits for this person and something different for that person.
I like authentic, so you might find my photographs aren’t as curated as you’d expect. I want you to see what real food looks like, ready to serve to those you love, including yourself.
I don’t believe that old saying No kid ever starved. I take my hat off to any parent/individual who is dealing with fussiness, an eating disorder, sensory sensitivities, intolerances, allergies, gut issues, or disability. I hope there is something in my upcoming cookbook that everyone can eat.
Here’s my first recipe. 999 island dressing is a simple dressing that goes with everything, but especially next week’s recipe for delicious veggie-burgers. It’s not quite Thousand Island dressing, because it’s a bit more flexible than that depending on what you have in your fridge and pantry. The practicality theme runs through my cookbook!
Yum!
Happy cooking
Joni
1 part tomato sauce
2 parts cream or natural yoghurt
2 parts mayonnaise or dressing
Add all ingredients into a jug and mix well. It should look a lovely shade of pink.
Serve.
